These are the newest types of oak that we are carrying. Many winemakers believe that oak cubes and oak spirals best replicate the taste and effects of barrel aging. Here is a pdf that describes the benefits of oak cubes and why they might be better.
We are now carrying American White oak barrels.
These Czech barrels are made by Moravske Bednarstvi, crafted in the Czech Republic and Hungary. The oak is Quercus petraea and has been air dried for 3 years (!) prior to coopering. All barrels have a medium toast level. Barrels made from wood grown in this region of the world were used almost exclusively by the French wine industry before World War I and II and Communism limited availability.
The oak is much prized for the imparting of vanillins, phenols, sugars and many other flavor and aroma profiles unique to this region.
